I have been fasting one day each week, not so much for weight loss but for its overall health benefits. There is something to be said about the strengthened patience and resolved self control that it takes to fast but more importantly, my renewed appreciation for food! I am looking forward to a spread of silky smooth 'Kaya' on my warm buttered toast paired with a cup of hot coffee or Milo (Malaysian chocolate milk) when I break my fast tomorrow morning and I know I'm set for a beautiful day ahead.
Kaya means rich in Malaysian language. It's also the name of our beloved Coconut Egg Jam, perhaps because it is luscious, creamy and fragrant - a ubiquitous breakfast staple in Malaysia and much of Southeast Asia.
I'll be making caramel kaya, just like how my mother-in-law showed me. It tastes best on thick milk bread toast that's crispy on the outside and still soft and pillowy on the inside. Paris Baguette has my favorite kind of Milk Bread.
