First there's sweet, salty, sour and bitter. Then came umami (for savoriness). And now, there's fat! Well, not quite official yet, but a growing body of research is supporting the existence of this sixth taste and I couldn't agree with it more. Malaysians, often describe our food by using the word 'lemak' which loosely translates to fat in a good yummy way and in Nik Sharma's The Flavor Equation, he aptly calls it richness.
Most kuih has some sort of 'lemak' to it. I hope you detect them and savor the flavor. This month's kuih box includes Seri Muka, Loh Mai Chi and new to the box is Kuih Lompang:
Seri Muka (Custard Sticky Rice) is a prime example of what Lemak means. Its decadent richness comes from coconut milk, not something that you have to worry about when indulging. It has a coconut milk infused sticky rice base layer topped with fragrant pandan egg custard.
Loh Mai Chi (Peanut Mochi) is one of my kids favorite because it has the perfect sweet, salty combination from the crumbly peanut filling and they love the soft stretchy texture of the glutinous rice dough that wraps it all together.
Kuih Lompang aka Kuih Kosui (Steam Rice Cake), is a simple kuih known for its signature dimple that is filled with grated coconut. It is lightly sweetened with Gula Melaka (palm sugar) and gives a chewy and bouncy bite.
