Hot! Hot! Hot! While many of us welcomed summer with Memorial day, Sunday was Hari Raya Aidil Fitril (or Eid al-Fitri), a celebration that marks the end of fasting Ramadan month.
Growing up in a Muslim majority Malaysia, we celebrate Raya by visiting our Muslim friends who host open house with special Raya dishes. The tradition continues in the Bay Area but sadly this year's invites have been suspended (no surprise there, thanks to the pandemic.).
I must admit, I miss it; the kinship and closeness amongst friends and family bonding over yummy food. So I decided to make what brings me joy. I made an ambitious list of Raya dishes and cooked up a strom I did. And I am not finished yet as I wanted to share the best parts with you: bite-sized snack or dessert called kuih. I'm excited to offer the following gluten free treats:

INGREDIENTS
Kuih Lapis – tapioca, rice and mung bean flour, coconut milk, sugar, butterfly pea flower
Bingka – coconut, palm sugar, eggs, butter
Pulut Panggang - glutinous rice, coconut, beef, chilies, shallots, garlic, lemon grass, galangal, ginger, shrimp paste, coriander, cumin, tamarind
