December 16, 2020 - Popcorn and Cookie
As the year draws to an end, I find myself yearning for the future that can't seem to come soon enough. Awaiting the freedom to gather and to travel, thoughts of exploring the new filled my head with excitement.
Let's close out the year with something fun and light - what is snacky, crunchy, sweet and salty all at once - introducing Sea Salt Gula Melaka (palm sugar) Popcorn. Made with stovetop-popped corn kernels, seasoned and baked to crunchy perfection. And there's no hiding from the intoxicating gula melaka aroma.
While we're on the nose, I'm also sharing my favorite cookie that uses two ingredients commonly found in Southeast Asia - the Ginger and Lime Cookie. It's spicy warm, crispy and has a wonderful citrusy aroma that sends me off to some island vacation somewhere.
Back to my present moment, I sense a calm and peaceful energy from the lingering smell of cookies baking in the oven and the Christmas jingles that is playing in the background. I am also reminded that it has been a difficult year for those that lost either their loved ones or livelihoods, and much is owed to the frontline workers that kept us all going. I hope you get to spend the last days of this year with your loved ones and may those tender moments be filled with joy, comfort and hope.

Sea Salt Gula Melaka Popcorn - Corn Kernels, Sea Salt, Coconut Oil, Pandan Leaves, Gula Melaka (Palm Sugar)
Ginger Lime Cookie - All Purpose Flour, Butter, Sugar, Sea Salt, Lime, Ginger, Eggs
Popcorn and cookie can be stored in air tight container at room temperature. Re-crisp popcorn in oven at 250 F for 10 minutes and let cool, if no longer crunchy.
